Donna’s Red Pepper And Sausage Breakfast Pie

Impress your family and guests on a special morning with this attractive breakfast treat. It tastes so good and yet it is surprisingly low in fat and calories.

3 slices bread or 2 cups plain croutons 1/2 tablespoon canola oil 1 small onion, finely chopped 1 medium red pepper, thinly sliced 4 ounces low fat turkey sausage (bulk or sliced turkey links) 4 ounces (1 ¼ cup) shredded cheddar cheese Egg mixture 1 cup Egg Beaters® or 4 eggs 2 cups fat-free milk 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon dry mustard 1/4 cup fat-free sour cream

Preheat oven to 350 degrees. Grease a deep 9 inch pie pan. Remove top crusts from bread and cut into 1/2 inch cubes. Place on baking sheet and bake for 10 minutes or until dry and lightly toasted. Remove from oven and place in pie pan.

In a medium skillet, heat oil. Add onion and cook until translucent. Add peppers and cook until tender. Remove onions and pepper from pan and place 1/2 of the mixture over the croutons in the pie pan.

Add sausage to skillet and cook until lightly brown and thoroughly cooked. Stir to crumble into small pieces. Place sausage in pie pan. Sprinkle cheese over sausage. Top with remaining onions and peppers.

In a large bowl, combine all remaining ingredients. Beat to mix well. Pour into pie pan. Let stand 10 minutes before baking to allow croutons to moisten or cover and refrigerate over night.

Bake uncovered for 45-50 minutes or until egg mixture is set and it is lightly brown on top. It will appear puffy when it comes out of the oven but expect it to deflate quickly.

Note: This recipe can be doubled and baked in a deep 9 x 13 inch pan.
