Donna’s Popovers

What could be more fun! Put together a few simple ingredients to make steaming hot popovers that will get rave reviews.

2 eggs 1 cup fat-free milk or milk of your choice 1/2 teaspoon salt 1/4 teaspoon baking powder 1 cup flour

In a medium bowl, beat eggs well. Warm milk in microwave for 30 seconds. Add milk, salt, and baking powder to the eggs. Beat well. Add flour and beat just until mixed. There should be a few small lumps remaining. Do not over beat. Let batter sit for at least 30 minutes before baking.

When ready to bake, preheat oven to 425 degrees. Spray non-stick popover pans or muffin pans with oil pan spray. Place empty pan in oven for 2 minutes or until hot. Remove from oven and fill each cup 1/2 full of batter.

Bake at 425 degrees for 20 minutes. Turn oven down to 350 degrees and continue to bake for 20 – 25 minutes or until very golden brown. (Large popover pans will take longer to bake than smaller muffin pans.) Pierce the top of each popover about 5 minutes before removing from oven to release steam. This helps prevent sogginess.

Remove popovers from pan immediately. This also helps prevent sogginess. Serve warm with butter and honey if desired.

Tips for making good popovers:

Preheat oven and preheat popover pans before filling with batter. Batter can be made several hours ahead and it should be at room temperature before baking. Egg Beaters may be substituted for the eggs but popovers are slightly tougher. This reduces the fat and cholesterol to zero. Use only non-stick popover or muffin pans. Spray cups with oil spray. Do not open the oven during baking. Popovers are leaved by steam. Constant heat is required for the rising of the popovers. Every popover comes out with a different shape. Celebrate the diversity.
