Donna’s Peach And Red Pepper Salsa
Serve this on the side with pork, chicken, or fish for a beautiful presentation and great flavor.
2 medium peaches or 1 large peach, peeled, pitted, and diced
1/4 cup red onion, finely diced
1/2 cup roasted red peppers, diced
3 tablespoons fresh mint, finely chopped
2 teaspoons lime juice
Combine all ingredients in a small bowl. Stir to mix.
