Donna’s Orange Walnut Flourless Cake

If there ever was a healthful cake, this would be it. It is made with fresh fruit and ground walnuts. The walnuts are a good source of the vital omega-3 fatty acids. This is a cake that needs to be dressed up a bit when serving. Serve with fresh berries and frozen yogurt or whipped cream topping.

1 cup walnuts or almonds

1/2 cup sugar or Splenda

1/2 teaspoon baking powder

1/4 teaspoon nutmeg

1/4 teaspoon salt

zest from 1 orange

3 eggs, lightly beaten or 3/4 cup Egg Beaters

1 medium navel orange

1 medium fresh peach

1 tablespoon cinnamon sugar mixture, optional

Topping – optional

1/2 cup whipping cream

1 tablespoon sugar

1/2 tablespoon Grand Marnier

Preheat oven to 375 degrees. Butter an 8 or 9 inch round baking pan or pie pan. Place nuts in food processor and process until finely ground. Transfer to a large mixing bowl. Add sugar or Splenda, baking powder, nutmeg, salt, and orange zest. Stir to mix. Add beaten eggs or Egg Beaters and stir to mix. Peel fresh orange and peach. Cut fruit into pieces and place in food processor. Process until pureed. Spoon into bowl and stir to mix. Pour into prepared cake or pie pan. Bake for 35 – 45 minutes or until lightly brown and set in the middle. Cool to room temperature and sprinkle with cinnamon sugar mixture.

For topping, whip cream until thick. Add sugar and Grand Marnier. Top each piece of cake with a dollop of whipped cream and garnish with fresh berries if desired. Frozen yogurt may be substituted for the whipped cream.
