Donna’s Guiltless Potato Salad
Potato salad made with regular mayonnaise is extremely high in calories. Using this recipe, you can make potato salad that tastes just as good but has far fewer calories and fat. Secrets to its good flavor are the additions of a small amount of French dressing, combined with the warm cooked potatoes, and special seasonings to enhance the low fat mayonnaise.
3 pounds red potatoes or russet potatoes
1/2 cup chopped onion
1 cup chopped celery
3 tablespoons French salad dressing, fat-free or regular
1/2 cup mayonnaise, fat-free, reduced fat, or light
1 tablespoon Dijon style mustard
1/8 teaspoon white pepper
1 teaspoon white vinegar
1/2 teaspoon sugar
In a large saucepan, cook potatoes in salted boiling water until tender but not mushy. Drain well. If using russet potatoes, remove peeling. Cut potatoes into bite-sized cubes. Place warm potatoes in large bowl. Add onions, celery, and French dressing. Stir gently to mix. Let stand 5 – 10 minutes. In a small bowl, combine all remaining ingredients. Add to potatoes and gently stir to mix.
Note: I tested this recipe with fat-free, reduced-fat, and light mayonnaise. They were all good but I liked the one made with the reduced-fat mayonnaise best.
