Donna’s Flax Seed Crackers
Surprise your guests with flavorful crispy homemade crackers. These are deceptively easy to make.
6 tablespoons ground flax seeds* 2 tablespoons toasted sesame seeds or whole flax seeds 1-1/2 cups flour 1/2 teaspoon salt 1/2 teaspoon baking powder 2 tablespoons butter or margarine 2 teaspoons dried minced onion or 1/2 teaspoon onion powder 1/2 cup milk 1 egg white, lightly beaten grated Parmesan cheese to taste salt or garlic salt to taste freshly ground pepper to taste olive oil spray
Preheat oven to 325 degrees. Cover 2 cookie sheets with parchment paper (although the crackers can be baked right on the cookie sheet without parchment paper if desired.)
In a medium bowl, combine ground flax seeds, sesame seeds, flour, salt, baking powder, butter, and dried minced onions. Beat with electric mixer until mixture resembles course corn meal. Slowly add milk and mix until mixture forms a large ball. Dough should be just moist enough to handle easily. Divide dough in 4 pieces. Using a rolling pin or a pizza roller, roll each piece until very thin on a lightly floured board. (Dip rolling pin into flour if dough is sticky.) Brush top with egg white and lightly sprinkle with Parmesan, salt, and or freshly ground pepper. Lightly spray with oil spray. Transfer to cookie sheet placing salted side down. Brush with egg white and lightly sprinkle with Parmesan , salt, and or pepper. Lightly spray with oil spray. Cut into small 1-inch squares. Repeat with other pieces of dough.
Bake for 25 – 35 minutes or until golden brown. Separate crackers and cool.
*Flax seeds can be easily ground in a coffee grinder. Note that ¼ cup of whole flax seeds yields 6 tablespoons ground flax seeds.
