Donna’s Cioccolato Flan

This is a wonderful Italian chocolate dessert. I begged for the recipe from a Chef on my recent trip to Italy.

1 egg 1 egg yolk 1/4 cup sugar 1/2 cup Splenda or additional sugar 1/2 cup flour 1/4 teaspoon salt 1 teaspoon vanilla 4 ounces (2/3 cup) semisweet chocolate chips 4 ounces (8 tablespoons) butter or margarine

Preheat oven to 350 degrees. Butter 6 small (4 ounce) custard cups or 6 muffin tin cups. In a small bowl, combine egg and egg yolk. Beat with electric mixer for 1 full minute. Add sugar, Splenda, flour, salt, and vanilla. Beat to mix well. In a small non-stick skillet, melt chocolate chips and butter over the lowest heat. Stir to mix. Add to egg mixture and beat well. Pour into custard cups. Bake for 15 – 30 minutes. Baking time will depend on your choice of baking cups. See note below.

Note: If you prefer a very soft “gooey” center, use custard cups and place cups in a pan of hot water. Bake in the water bath for 30 minutes.

If you prefer a soft but not liquid center, bake in custard cups or muffin tin without using the water bath. Bake the custard cups for 20 minutes. If using a dark muffin tin, bake for 15 minutes.

Remove flan from the pans by tipping the custard cups or muffin tins over and placing on individual serving plates. It is best served warm.
