Donna’s Black Bean Brownies

These brownies are a real taste treat. They are surprisingly good brownies that are very low in fat. The beans provide extra nutrients and fiber. The oatmeal crust and topping is wonderful but does increase the calories.

1/2 cup canned black beans, drained, not rinsed
3 tablespoons butter or margarine, melted
2 eggs
1 cup sugar
1/3 cup cocoa powder
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup flour

Optional Crust
2 1/2 cup rolled oats
3/4 cup flour
3/4 cup brown sugar
1/2 teaspoon baking soda
1/2 cup butter or margarine, melted

Preheat oven to 350 degree. Butter a 9″ square baking pan. In a food processor or blender, pureed beans with the melted butter. Transfer to a large mixing bowl. Add eggs and beat with a wooden spoon. Add sugar, cocoa, vanilla, baking soda, and salt. Stir. Add flour and stir until well blended. Spoon into baking pan. Bake for 20 – 30 minutes. Do not over-bake.

Note: This recipe can be doubled using a 9″ x 13″ pan
or triple the recipe using a 10″ x 15″ x 1″ jellyroll pan.

Optional Crust and Topping:
In a large bowl, mix crust ingredients together. Take out 1 cup of the mixture and set aside. Press remaining mixture in buttered baking pan. Spoon brownie dough over the crust. Crumble remaining oatmeal mixture on top. Bake 30 minutes or until middle is set.
