Donna’s apple, pear and cabbage salad with lemon yogurt dressing
This is a light refreshing salad. It can be made the day before serving.
1/4 cup lemon juice
1/4 cup maple syrup, sugar, or Splenda 2 large red apples, cored and diced 2 large fresh pears, cored and diced 1 cup dried orange flavored cranberries 2 cups shredded cabbage
6 ounces fat-free lemon flavored Greek yogurt 1/2 cup chopped walnuts, optional
In a small cup, mix lemon juice and maple syrup. Set aside.
In a large bowl, combine apples and pears. Add lemon juice mixture and stir to mix well. Add cranberries, cabbage, and yogurt. Stir to mix.
Cover and refrigerate until ready to serve. (The lemon juice and yogurt prevent the fruit from turning brown.)
